A long time ago, my flatmate used to bring these jars of tomato sauce that were so delicious. They came from her Sicilian grand-mother and my flatmate used to say: “I don’t understand why people buy it; it is so easy to make. You just cook the tomatoes in a big pan. You put the hot sauce in a jar and turn it upside down, that’s it.” It took me time to follow the instructions but when I finally did, I was convinced.
You can use any variety of tomatoes but the higher the quality of the ingredients, the better the dish will be for your taste and health. So choose your products well. (from your personal garden or the market, preferably organic).
You can add whatever you like: rosemary, thyme, pepper, stalk celery, half a carrot, a small portion of turnip, a small portion of fennel etc. and cook it.
You can use it on pasta or rice or even use it for another recipe. Enjoy!
For non-vegans, non-vegetarians, to make a bolognese, cut an onion, a carrot and a stalk of celery into small pieces. Fry in a pan with olive oil. Optional: add a diced carrot and/or a diced celery stalk. Once cooked through, add 250g of organic minced meat. Wait until the meat is grilled, then add the jar of tomato sauce. Simmer over medium heat for at least 10 minutes.
For a vegan recipe, use 240 g kidney beans and 75 g cashews for protein. In a hot frying pan, brown 3 large onions, finely diced, until transparent. Add a handful of kidney beans and the cashew nuts. When cooked through, add 1 diced bell pepper and the remaining kidney beans. Optional: add a diced carrot. Once cooked, add the jar of tomato sauce. Cook over low heat.
