You can replace the squash with celeriac.

Peel and cut squash and carrots into small pieces. Optionally, you can add a sweet potato.
Place in a cast-iron casserole or pressure cooker with coconut milk and stock (the stock is optional and homemade). Stir well.
Add curry powder (optionnal), salt and pepper.
Cook, covered, until the squash pieces fall apart and you can poke a fork into the carrots.
Mix in a blender.
